Famished Friday - Mexican Chicken Casserole

So each month our electric company puts out this bulletin and on the back you will find Member's Favorite Recipes.. how fun, right? So this month Cynco De Mayo was sneaking up on me and I didn't know what I was going to cook - but I received our bulletin and found this recipe so I decided I was going to cook it. It seemed like a hit at my house - after all my 'chef-boy-r-de' went back for seconds (and folks I would like to add he had it for leftovers and if you know my KingB he doesn't do leftovers although he might just tell you he was hungry and didn't want to cook anything and it was just quick/easy - BUT I'm going with the fact that he just liked it so much - HA).. SportyB liked the cheese and rice and ate some chicken but then he claimed it was too spicy for him.. so if you have kids that don't like spice you might want to eliminate the green chilies


Mexican Chicken Casserole
4 boneless Chicken breast halves, cooked and cubed
1 can tomatoes with green chilies (I used Rotel)
1 can cream of mushroom soup
1 can cream of chicken soup
1 can (4 ounces) taco sauce
1/2 cup chicken broth
1 package taco chips or Doritos
1/2 to 3/4 cup grated American cheese, Mexican blend or Classic Melts blend
1 can corn (optional)

Cook chicken and cube. In a saucepan, combine and heat cooked chicken tomatoes, soup, taco sauce, broth and corn (optional). Line bottom of casserole dish with taco chips (or Doritos). Add mixture of chicken and sauce to casserole dish. Top with grated cheese. Bake at 350 until bubbly and hot - we served over rice and my husband suggested garnishing with additional Doritos for an added crunch.
