I got this recipe from a fellow blogger and it was a big hit at our house. I call it Chicken and Black Bean Salad... yummy and it's low fat and low calorie.. can't beat that!
2 scallions (or sub with red onion) chopped
1 red bell pepper, chopped1 green bell pepper, chopped
2- cans black beans, rinsed and drained
1 Cup frozen corn (I used 2cups as I did more chicken)
4 TB lime juice
2 TB canola oil
2-4 chicken breasts, grilled and chopped into bite size pieces
4 TB taco seasoning
1/3 C cilantro chopped
1 avocado chopped
sour cream or ranch dressing for topping
Combine, scallions/red onion, peppers, beans and corn in a large bowl; toss until well mixed. Add lime juice and oil to bean mixture, toss to coat. Add chicken, taco seasoning and cilantro; toss. Add avocado.Top with sour cream/ranch dressing and serve as is or rolled up in a tortilla or with tortilla chips.This is great the next day- the avocado is fine because of the lime juice
